    3 gallon yield. BIAB. Pacman yeast is available online and at some LHBS. I have it in my area (Seattle) and if not use 1056 American Ale yeast. Keep it cool as you can. No need to lager it though.

    Great summer drinking Belgian made as an attempt to copy a beer fest winning brew from 7seas Brewery in Gig Harbor, WA. Brew-master Travis was given a challenge to make a beer with 2 mystery ingredients (lemon grass and coconut) and even though it is not his normal style he hit it out of the park and had the best beer at the fest. I made this for my wife and friends who wanted more and because Travis said it was a one and done thing for him. We left out the coconut because of the expense and because it did not seam to add much flavor...According to wife and friends the result was goooood! enjoy

    All American hops with a little pungent Columbus at start and finish of boil for some unique flavor. The Nottingham yeast really lets the malt and hops shine through and floculates well. The maple syrup adds a nice depth to the complexity. If bottled, it\'s ready to drink in 4weeks start to finish. I like it kegged best.

    Substitue US 2-row for munich. This is a malty balance but hopped enough for a mild floral/spicy flavor. Dry hop with 1/4 oz. of centennial if you like a nice hop aroma.
